Pumpkin Spice Toffee Cut-Out Cookie Recipe

These are also the perfect cookie for Thanksgiving, so you can practice them now and be ready for the holiday. They also freeze perfectly. Happy baking!

Pumpkin Spice Toffee Cut-Out Cookie Recipe

Cookie Dough Ingredients:

1 cup Unsalted Butter Sticks
1/2 cup Can Sugar
1/2 cup Dark Brown Sugar
1 Egg
1 tbsp Vanilla Extract
2 tsps Pumpkin Spice
1 tsp Salt
3 cups Flour
1/2 Bag Toffee Bits

Royal Icing Ingredients:

1 1/2 tbsp Meringue Powder
3 tbsp Warm Water
1/2 tbsp light corn syrup
2 cups Powdered Sugar
1 tsp Vanilla Extract
Food coloring/gel

Pumpkin Spice Toffee Cut-Out Cookie Recipe

Instructions for Cookie Dough:

  1. Cream butters and sugars together.
  2. Add egg, vanilla extract, salt and pumpkin spice. Mix well.
  3. Add flour and combine.
  4. Finally, add toffee bits and mix. Dough should not be sticky. If it is very stick, add more flour.
  5. Roll out dough to 1/4 inch thickness between two pieces of parchment paper.
  6. Chill dough in fridge for at least 30 minutes.
  7. Cut out desired shapes and place on a cookie sheet. I do not need to grease mine, but you may if you choose.
  8. Bake at 375F for 7-9 minutes. Cookies should not look doughy or shiny, but be careful not to over-bake.
  9. Cool cookies completely on rack before frosting.

Royal Icing Instructions:

  1. Sift all dry ingredients together into a bowl.
  2. Add wet ingredients and wisk together.
  3. More water = more runny icing. Add accordingly.
  4. Add food coloring last as needed and mix well.

Remember, frosting with royal icing takes practice. It’s okay if your cookies do not turn out perfectly on the first try. My first batch was hideous, but delicious. It’s the thought and effort that count!
