My Favorite Thanksgiving Pumpkin Pie Recipe

Are you looking for a last minute, relatively simple pumpkin pie recipe? This one has proved tried and true for every Thanksgiving, and I never have leftovers. My Favorite Thanksgiving Pumpkin Pie Recipe

Ingredients:

  • 1 Can Pumpkin Puree
  • 1 tsp Cinnamon
  • 1/8 tsp Allspice
  • 1/8 tsp Cloves
  • 1/4 tsp Ginger
  • 1/4 tsp Nutmeg
  • 1/2 tsp Salt
  • 1/2 cup Sugar
  • 1/2 cup Brown Sugar
  • 1 tsp Vanilla
  • 3 Eggs, 1 Egg Yolk
  • 1 1/2 cup Half ‘n Half

Preparation:

1. If making crust from scratch, pre-make and allow to cool. I suggest cooling dough overnight. For an excellent crust recipe click HERE.
3. Combine pumpkin puree and spices. Mix well.
4. Smooth onto a baking tray.

(Pro Tip: No need for parchment paper. The mix will not stick to the baking tray. Baking the pumpkin and spice mixture is a game changer for pie. Don’t skip this step. )

5. Bake mixture at 350F for 12-15 minutes.
6. While pumpkin mixture is baking, prepare pie crust. You will need to pre-bake the crust. For the above recipe, pre-bake the crust 15-20 minutes at 400F.

Pro Tip: I blind bake or pre-bake my pie crust with smaller dry beans. I find those work best.

7. Scrape mixture into a bowl. Add sugar, brown sugar, eggs, egg yolk, and half ‘n half. Wisk thoroughly.

8. Pour mixture into pre-baked crust.

(Pro Tip: Place the pre-baked crust on the oven shelf before pouring mixture – unlike the picture above. Pour the mixture slowly. This will limit spillage and browning of crust.)

9. Egg-wash the crust edge carefully.
10. Bake pie at 425F for 15 minutes. THEN drop the oven temperature 350F for 35 minutes.

(Pro Tip: Yes, it is okay to leave the pie in the oven while the temperature drops. Do not remove the pie from the oven.)

11. Allow to cool. The pie center should have a slight jiggle. It will solidify further as you cool the pie.

(Pro Tip: Do not for any reason poke the center of your pie to check if it is done. It will create a break in the smooth top. I do it every year. Can’t stop myself. Smh.)

12. Serve with whipped cream and enjoy. Happy Holidays!

Bonus Tip: If you would like to get extra fancy, use some of the share crust dough to make leaves or other decorations for the top of the pie.
